Il Tempo Nuovo is the place where your Salento culinary experience will begin. Here we celebrate Mediterranean cooking; our Chef Tommaso Sanguedolce reinvents traditional Italian dishes, especially from south Italy, presenting delicious gastronomic creations based upon ancient recipes handed down through generations, using the simplest and freshest ingredients as a point of departure. His philosophy is to concentrate on the flavors, putting into high relief natural, seasonal products and extracting their essence with elegance and a distinguished light touch. Thanks to his innovative culinary techniques, Tommaso Sanguedolce’s creative flair bestows a “New Time, Tempo Nuovo” unto a traditional cuisine, in front of the backdrop of an ancient Norman tower within the walls of an imposing castle brought to new life by its owners.
